Traditional Holiday Pies
Pie Crust
cut these together
5 cups all purpose flour
3 tsp salt
2 1/2 cups shortening
in a 1 cup measure
1 egg
1 tsp vinegar
cold water up to 1 full cup
stir this into flour/shortening
makes 6 single 9 inch pie crusts
Pecan Pie
batter mix
3 large eggs
1 cup white sugar
1/2 tsp salt
1 cup dark corn syrup
1 Tbsp flour
1 tsp vanilla
1 Tbsp melted butter
place 1 cup pecan halves in unbaked 9 inch pie shell
pour batter over pecans
bake @ 350 for 40-50 minutes
check by inserting knife into center of pie, knife will come out clean when pie is done.
Sweet Potato Pie
batter mix
1 lb. pureed sweet potato
1/2 cup butter, softened
1 cup white sugar
1/2 cup milk
2 large eggs
1/2 tsp fresh ground nutmeg
1/2 tsp fresh ground cinnamon
1 tsp vanilla
mix all thoroughly
pour into unbaked 9 inch pie crust
bake @ 350 degrees for 1 1/2 hours
check by inserting knife into center of pie, knife will come out clean when pie is done.

Making the crust (makes 6 single crusts)
Mise en place

I still cut this with a pastry blender, not a food processor.

Done

Add wet ingredients and mix.

Roll out a bit to fill a 9 inch pie tin. Press the crust into the bottom.

a-ha! I have a little extra dough.... see what I do with it!

Puree the sweet potato. I just turn it on and let it run for a few minutes.

Pecan Pie
Mise en place

check this out closely. this is one of my "tips and tricks" I make batter for 4 pies to fill 3 9 inch crusts. (this is a very old family recipe, they used to make 8 inch pies) There is a little extra batter, but you will see how I use it, maybe you already know!

Sweet potato, these go in first because they take the longest.

I always place the pecans in the crust first and then pour the batter over.

Pies are a dedication of love because they are A LOT of work. I always make an apple pie for Thanksgiving and phew that takes some work.

I've never met a Sweet Potato Pie that I didn't like. Nearly choked to death on a sweet potato as a youngster, I've been taking my revenge ever since.

Got up early today to make a few pies.

Had most of the fillings already made.

Apple pie ready to be topped.

All total I made 30 pies.

The 30th pie is an "orphan pie". This was all the leftover filling and some crust. There is sweet potato, pumpkin and pecan all mixed together.
