Rhubarb Pie Recipe
(Makes 1 9 inch pie)
5 cups chopped rhubarb
1 2/3 cup sugar
1/2 cup flour

Pie Crust Recipe
(Makes 6 single crusts)
5 cups flour
3 tsp salt
2 1/2 cup shortening
mix together then add
place in 1 cup measure
1 lg egg
1 tsp vinegar
water up to fill cup measure
Roll out bottom crust. Mix rhubarb, flour sugar pour into bottom crust. Top with 1 Tbsp butter

Roll out top crust. Wet the edge of the bottom crust. Place top crust and seal edges.

Dock the top crust so steam comes out the top. Brush with egg wash and top with sugar.
Bake @ 450 for 15 minutes then 350 for 40-45 minutes.

I never have eaten rhubarb. It looks suspiciously like celery and I can't picture a celery pie being all that good. Then again, I recently tasted a jalapeno/cucumber margarita and it was good. :noidea: I'm not sure that I could find rhubarb down here unless I go to a high-end market.

You guys don't know what you're missing. Rhubarb has a taste all of its own. It is sharp but palatable. Some mix it with strawberries to tone the sharpness down.
Yes, the stalks kind of look like celery but that is where the similarity ends. Whatever you do, don't eat the leaves. They are poisonous. The stalks are the edible part.

I am a purist when it comes to rhubarb. Nothing else goes into my rhubarb pies.
We have made rhubarb chutney... yummm (we do use apples in our chutneys because of the pectin to help thicken)
My wife makes it that way....but she adds Strawberries.....it is to die for!
