Bell Pepper Challenge
I was recently challenged to prepare a six course meal with the "secret ingredient" being bell peppers.
got peppers?

I will present recipes and prep first, then present the finished dishes last.

Light the grill

Roasting


You should be here to smell this, yummm!

Placed in bowl and covered to sweat. The singed skins come off easier when doing this.

Bell Pepper Challenge: Prep
Appetizer: Bacon Wrapped Bleu Cheese Stuffed Baby Gypsy Bell Peppers
4 baby gypsy bell peppers
1 Tbsp Maytag Bleu cheese
1 Tbsp Cream Cheese
1 Tbsp minced kalamata olives
4 slices bacon cut in half

Cut off stem end of peppers and remove seeds.

Combine cheeses and minced olives

Stuff the peppers and wrap in bacon

Bake @ 350 for 20-25 minutes.

Soup Prep: Creme Fraiche
1 cup heavy whipping cream
1 Tbsp buttermilk
(We made 3x to have some on hand.)

Place in jar topped with paper towel held on with rubber band. Set aside for 24 hours.

Bell Pepper Challenge: Prep
Soup Prep: Roasted Red Bell Pepper Bisque
1 1/2 tablespoons extra virgin olive oil
1/2 large carrot, peeled and chopped
1/2 medium yellow onion, peeled and chopped
1 stalk celery, chopped (if you don’t plan to strain the soup, peel celery before chopping)
1/4 teaspoon cayenne pepper
2 medium red bell peppers stemmed, seeded, and chopped into 1-inch pieces
2 cups chicken broth
1/4 cup heavy cream
Kosher salt and freshly ground black pepper
1/2 cup crème fraîche or sour cream, stirred to a smooth consistency, for garnish

In a stock pot sautee in olive oil, carrot, onion, celery for about 8 minutes.
Add bell peppers, cayenne, chicken broth, salt and pepper. Simmer for 30 minutes.
Pour into stand blender and puree.

Strain through a mesh strainer.

My Mom used to make stuffed bell peppers....so good and so many years since I had one....

Bell Pepper Challenge: Prep
Moroccan Roasted Bell Pepper Salad
2 roasted green peppers, quartered and seeded
1 roasted red pepper, quartered and seeded
3 Tbsp olive oil
2 Tbsp onion, minced
1 clove garlic, minced
2 medium, very ripe tomatoes, diced
1/2 t salt
1 t ground cumin
1/4 t cayenne
1/2 t balsamic vinegar
1 collard green leaf, chiffonade
salt and pepper

Heat 2 Tbsp oil in saute pan, add onion, garlic and roasted green peppers, saute for 5 minutes stirring frequently.
Then add tomatoes, cumin, cayenne and cook 6 minutes
In a separate bowl whisk together remaining oil, vinegar, salt and pepper. Add roasted red pepper to this and set aside.

Bell Pepper Challenge: Prep
Roasted Red Pepper Sorbet
1/4 pound red bell peppers
1/4 cup water
1/4 cup sugar
1/4 cup lemon juice

In a small sauce pan bring water to a boil and whisk in sugar to dissolve. Place in blender with peppers and lemon juice, puree until smooth. Freeze until firm.

Bell Pepper Challenge: Prep
Three Pepper Linguine: Prep
Spinach Linguine
1 1/4 cups torn spinach leaves
2 tablespoons water
1 egg
1/2 teaspoon salt
1 1/4 cups all-purpose flour

In a small pan bring water to a boil, add spinach till tender.
Drain and add to flour salt and egg in a food processor. Blend until dough can be kneaded without being to wet or too dry.

Wrap in plastic and set aside for about 30 minutes.

Divide into 4 balls and roll out to desired thickness.


Roll the sheets up and cut into 1/4 wide strips. Set aside to dry for 2 hours.

Three Pepper Linguine: Prep
Peppers
1 cup coarsely chopped green pepper
1 cup coarsely chopped red pepper
1 cup coarsely chopped yellow pepper
3/4 cup chopped onion
1 clove garlic, minced
3 tbsp. olive oil
1 lb diced roma tomatoes
Add all to a large sautee pan, simmer for 15 minutes.

Basil Pesto
1 cup fresh basil leaves chopped
1 cup fresh parsley
1/4 cup toasted almonds
2 cloves garlic
1/2 tsp salt
1/2 tsp pepper
1/4 cup romano cheese
3/4 cup olive oil

Combine all in food processor and drizzle in olive oil

Bell Pepper Challenge: Prep
Petit Pan Rolls
5 tsp dry yeast
2 1/2 cups warm water (110f)
1 tsp sugar
combine in stand mixer bowl, let yeast activate for 5 minutes
add
1 Tbsp salt
3 cups bread flour
mix on low with dough hook for about 5 minutes
add 3 cups bread flour
mix on low for about 5 minutes
check dough, add more flour if sticky
let rise for 30 minutes, then cut into desired shapes.
Brush with egg/milk and top with white and black sesame seeds

Bake in 450 degree oven for 15-18 minutes
