I loves me some MAC&CHZ
6 slices white bread torn into 1/2 inch pieces
8 tablespoons butter
5 1/2 cups half&half
1/2 cup flour
2 teaspoons kosher salt
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper
9 ounces colby jack cheese
9 ounces sliced muenster cheese
2 cups 4% fat cottage cheese
1 pound rigatoni

melt two tbsp butter and pour over bread
melt remaining butter in 4 qt sauce pan and add flour
cook on low for 2 minutes
add half and half, salt pepper, nutmeg, cayenne
whisk until thickened (not over 160 degrees)
add colby jack cheese
whisk until cheese is totally melted
cook rigatoni to 1/2 time recommended on package
heat oven to 375
ladle enough cheese sauce to cover bottom of greased 9x13 pan
layer with rigatoni and top with muenster

top with remaining rigatoni then rest of cheeses and top off with croutons.
Bake for 30-40 minutes until golden brown
