4 medium size russet potatoes'
kosher salt
black pepper
1 Tbsp butter
3 Tbsp veg oil
peel and shred potatoes

heat butter and oil in saute pan over medium high heat

Rinse potatoes. If you do not, the starch makes the potatoes a gummy mess.

Dry the shredded potatoes. You do not want them to steam. I roll them up in a hand towel and give them a firm twist.

Dump into bowl and season with kosher salt and black pepper. Add any seasoning you wish, thyme, basil, garlic onion, etc.

Place in saute pan evenly.

Fry for about 8-12 minutes, fold in half and serve!
