Chicken Taco Soup
--Posting for 213 (and anyone else who loves their crock pots)--
This recipe is SUPER easy and it tastes fantastic.
1 onion, chopped
1 can black beans
1 can chili beans
1 can whole kernel corn
1 cup tomato sauce
1 bottle/can of beer (12 oz)
2 cans diced tomatoes w/green chilies, undrained
1 pkg taco seasoning
3 whole chicken breasts
shredded cheddar cheese
sour cream
crushed tortilla chips
Toss everything in the crock pot (except the chicken and the last three ingredients) and mix it up. Push the chicken breasts in until they're just under the top. Cook on low for about 4 1/2 - 5 hours...pull the chicken out, shred, and put it back in. Stir and cook for another half hour or so (or however long you want really). Garnish with shredded cheese, sour cream, and crushed chips.--"D.B.A.D." --Me
