I'm thinking about making it with dark meat turkey. What do y'all think? Any recipes? Should I start with cooked turkey or just boil raw turkey?

Dunno how you would feel about this but I'm a HUGE fan of ground turkey...
My mom called it chicken catchatore(spelling is phonetic at best),and I know you have to brown the chicken first.Seems if you cook it completely you will lose lots of the flavor:confused:Maybe bake it to about a 120* point,than add it to the sauce??,Dont think browning would work due to the thickness.
Wife's chicken spaghetti has Velveeta, rotel tomatoes, etc in it. I just think that dark meat turkey would add a different flavor. I also want to try throwing in some water chestnuts or something similarly crunchy.
