    Sauerkraut and Pork Shoulder with knedels

    Sauerkraut and Pork Shoulder with Knedels

    2 lbs Pork Shoulder steaks (.99 cents/lb)
    6 B-Size potatoes, quartered
    2 medium onions, 1/2 inch strips
    2 qts Homemade Sauerkraut




    The Steaks



    Sear the steaks





    Deglaze the pan with some of the sauerkraut juice.



    Place steaks in pan (This is my Mom's old enamel ware)



    Top with Sauerkraut



    Add Onions and Potatoes, bake at 350F for 2 hours.

    Knedels

    My Grandmother's notes



    Knedels

    Take 2 or 3 slices of bread
    Pour around 1 cup of milk
    over them. Let soak
    awhile, then 1 tsp salt
    + 1 egg, then enough
    flour, I think 1 or 2 cups
    or more, just to make
    stiff enough to make
    the balls, Then shape
    in wet hand + put in
    boiling water, Let boil
    at least 1/2 hour

    Presentation



    Pork Shoulder Steaks roasted with homemade sauerkraut, onions, potatoes. Served with knedels, red cabbage salad and dark rye rolls.
