other variations using pickle juice...

add any of the following minced garlic, onion, hot peppers, garam masala

holiday eggs!
Set up three jars with white vinegar. Add blue food coloring to one, red food coloring to another, and leave one plain. Leave in fridge 3-4 weeks and you have a great 4th of July deviled egg display! Or of course use red and green for Xmas.

I made the pickled eggs recipe that calls for pickled beet juice as a base. OMG. I'm going to keep some on hand, these things are obnoxiously good! Put some onions in it for giggles, and just.. yum. They're best if allowed to sit in the fridge marinading for several days first.
