Chili Relleno & Salsa
Looking for some good homemade recipes for Chili Rellenos and fresh Salsa. I have never made either myself and I simply love the taste of fresh Salsa and all the ingredients should be locally available in the coming months. Any experiences are appreciated.

fresh salsa = pico de gallo?
My view, pico is fresh, salsa is the cooked version.
I have a chile relleno recipe that is more of casserole and is easier to make
btw - funny, I am reading this thread eating a bowl of my pico de gallo with blue corn tortilla chips.
Pico De Gallo
1 large onion, small dice
8 roma tomatoes, small dice
3 medium size jalapenos or two large serrano peppers, fine dice (seeds included!)
3 Tbsp fine chop fresh cilantro
juice of 1/2 lime
I will dig up the relleno recipe shortly.

Thank you much. As far as salsa vs. pico de gallo, it is either or for me. Just looking for something to make on a 5 to 7 person scale for chips and such.

re: pico/salsa
taste your pico/salsa after adding each hot pepper. Hot peppers can surprise you sometimes.
I have seen people add oregano, vinegar, sugar, garlic, bell peppers, cucumbers, zucchini, yellow squash, lemon juice etc
I like what I make because it is simple and fast.

Simply Salsa
Ingredients
1 medium onion
2 cloves garlic
Juice of 1/2 lime
1 (15 oz.) can diced tomatoes
1 Tbsp. Southwest Chipotle Seasoning Blend
Optional:
2-3 Tbsp. fresh cilantro
Peel and slice onion into 4 pieces; place in Quick Chef with blade, cover and turn handle until onion is roughly chopped. Peel and smash two garlic cloves and add to Quick Chef. Add remaining ingredients; cover and turn handle until desired consistency. Remove blade and place salsa in Snack Cups or a bowl for serving. Serve with chips or as a topping for tacos!
This is my favorite, it's from an old tupperware recipe but if you just replace "quick chef with blade" with chop you're good.

sub the tomato sauce with enchilada sauce
You can buy canned or make your own, it is easy!
