Buffalo Burger
Hamburger Buns
1 cup milk
1/2 cup water
5 tsp yeast
1/4 cup butter or margarine
3 Tablespoons sugar
3 1/2 cups all-purpose flour
place yeast and sugar in mixer bowl
Heat milk/butter/water to 110 degrees.
Pour into mixer bowl and add half of flour.
Mix on slow until well mixed.
Add rest of flour.
Cut into rolls and brush with beaten egg and top with sesame seeds.
Proof for 30 minutes.
Proofed!
Bake @ 450 for 12 minutes
Baked!

Buffalo Burger: Building The Buffalo Burger
I ground a 3 lb. roundsteak for this.
Make 6 small patties (1/4 lb each)
Place 1 Tbsp bleu cheese crumbles and 1 Tbsp fine diced celery on three of the patties.
Place plain pattie on topped pattie and thoroughly seal the edges.

Buffalo Burger: Presentation
Flip the Buffalo Burger in the sauce. Dip the top half and bottom half of bun in sauce.
Top with bacon and serve with extra sauce, mustard oil potato salad. MasonJarita optional.

This was definitely a hit. The bleu cheese flavor was there in every bite. The celery was still crisp. Even though the burger and the bun were dipped in the sauce, it still needed a side of sauce. Bacon was a nice added touch. The mustard oil potato salad hit the respiratory system as the Louisiana Hot Sauce took care of the rest.

Cut the sugar Mac. Doing wonders for me. Granted I only drink Mic Ultra now. I try to stay below 30 grams of sugar a day. I'm averaging 15 for the last week.
