Health Soup
So, me and Cidp24a have decided to healthy up our eating. Our daughter has a soup she makes that is very low in calories, healthy, and very filling. I'm not saying that it is as delicious as a pot of homemade vegetable beef but it's not bad and it's healthy. To me, a small bowl makes an excellent snack. Here it is.
(By the way, it makes a HUGE pot but supposedly freezes well)
5 med carrots, peeled, cut into pieces
1/2 med onion (more if you like) cut into small pieces
3 cloves of garlic
5-6 celery stalks
1 head of purple cabbage, cored and cut into chunks
5-6 stalks of green onion, cut into 2" pieces
2 large cans crushed tomato with juice
1 large (quart)bottle V-8 low sodium
2 tbs olive oil
salt and pepper to taste
Put all above except for the tomatoes and V-8 in a food processor and process to almost a paste.
put the paste in a large pot, add tomatoes and then the V-8 until the paste has a soup consistency that you want, add salt and pepper.
Simmer on low-med low for about an 1 1/2 hrs.
Once it is done, use this for a base. I added chili powder and low fat sour cream to mine and made chili. You can add taco seasoning and strips of whole wheat tortillas for sort of a taco soup. Add diced squash and cut green beans for another flavor profile.
The recipe is not written in stone, play with it as you wish. I think I'm going to see what a little Tony Chachere's and some Zatarain's crab boil will do to it.
