CHICKEN CHICKEN CHICKEN
Chicken Hindquarters were on sale $3.90 for a ten pound bag!
This is how we made three different chicken meals.
The Chicken
Processing the hindquarters.
Cut at the back of the leg to separate from the thigh.
Pop the thigh bone out from the back.
Cut the back off the thigh and pull the skin off the thigh.
Finished processing.

Apple Wood Smoked Drumsticks with collard greens, jasmine rice and corn muffins.

CHICKEN CHICKEN CHICKEN Part II
Chicken Tomato Soup
I simmered the backs for a few hours.
After it cooled a little, I strained the broth and deboned the backs. The broth and the meat went in the fridge. After the broth chilled I pulled the fat off the top.
In a crock pot add
Broth and meat
2 qts stewed tomatoes
3 ribs celery, diced
2 medium onions, diced
4 carrots, diced
1 Tbsp cracked black pepper
4 serrano peppers finely sliced
This cooked on low in the crock pot about 8 hours.
Cook off 1 lb. of small shell pasta.
Chicken Tomato Soup served with fresh bread.

Grilled Tandoori Chicken
I followed this recipe by Emeril
Grilled Tandoori Chicken Recipe : Emeril Lagasse : Food Network
In a blender, combine the oil, onion, garlic, ginger, pepper, and process on high speed to a paste.
Add the paprika, salt, cumin, turmeric, coriander, garam masala, and cayenne, and process until well blended.
Add the yogurt and lemon juice, and process to a smooth sauce, scraping down the sides to combine all the ingredients.
Pour the marinade over the chicken.
