Oh the Iowa State Fair. The pictures remind me of growing up going to Des Moines for the fair every year and minus the back side pictures make me wonder why I never go back to visit during the fair.
I can atest to the fact that if you leave the ISF and get hungry within a week it is your own fault. You can eat a meal every hour and never eat the same thing twice.

I knew after the first bite it was going down in less than ten minutes. The food was so fresh and hot, I had to pause a couple times. A very nice couple sitting with me kept talking to me. It was after the first bit that I noticed people were actually watching me. This was a very tasty burger.
Right at ten minutes I finished the last of the chips.

This went pretty smooth, I went up to the Birds Nest and ordered another. jk!
The young person that helped me said he personally has served over two hundred of these this year. A few have ordered a second.

The first Saturday of the fair over 8800 pork chops on a stick were sold. I dropped in to chew the fat.
The gentleman at the cooker was spraying something on the chops. It was just water and caramel coloring. He said in years past the pork chop on a stick was a saline injected product. This year they changed suppliers. The new pork chop on a stick is now injected with LARD!!! Yes, it really made a difference.
The two cookers hold about 400 chops each. There are also three large grills out in front of the pork tent. They cook the pork chop on a stick to about 150-152 degrees.
A couple of friends were entered in some of the state fair cooking competitions.

My friend entered a Northern Italian style lasagna roll. Northern Italy is known for it's white sauces. This dish had a three white cheese sauce with tarragon and Graziano's Italian sausage. Fried kale on the side was a nice addition.
