    Fyfe Concessions



    The man behind Deep Fried Butter on a stick at the Iowa State Fair.

    Larry Fyfe and I



    Larry took a few minutes to chat. He has 5 food food stands at this fair. I told him I ate the entire menu at last years Man vs. Fair. He smiled and gave me a thumbs up. Even though they were selling about 40 deep fried butter on a stick per hour, they won't be back next year. We'll just have to wait and see what will be the next "Fair Super Fried on-a-stick Food".

    DEEP FRIED BUTTER!!!



    I caught up with some people that got a fresh deep fried butter on a stick. They usually try to make a few ahead of time. The butter absorbs into the batter or flows out. You can see some butter here.

    THE CHALLENGE



    Every year these guys treat me to some nice beef tidbits.





    They told me every year the concessions in the area share food that is not on the menu. They bring jumbo shrimp and chicken breast tenderloins. They give the jumbo shrimp to the cajun chicken booth to deep fry in cajun batter. The chicken breast tenderloins are cooked on the grill with jerk seasoning or spicy buffalo sauce.
    They asked me if there was any horseradish on the fair grounds. They were trying to make cocktail sauce for the shrimp. This was the challenge!

    My first stop.



    I thought for sure the only place that serves prime rib would have horseradish. All for naught, they had just run out!

    I could not let these guys down. Then I had an idea! A faux remoulade could be made with a few ingredients from three different concessions.



    Hot mustard





    relish, mayo, onion, ketchup



    Mixed, red remoulade and white remoulade



    Just in time for the shrimp!



    This was perfect with the shrimp.
