Boston Butt Smoked
I am officially moving on up in my confidence with the smoker. Today I decided to go with a longer smoke and moved up to a 5lb Boston Butt.
Rubbed down with mustard powder:

Seasoning Salt just a dash:

Shook on plenty of Rosemary (just cause I love the stuff)
Right after this pic, I moved the drip ban under the Butt and kept the temp between 190-225 degrees for 7 hours. Used Hickory wood.

About half way through. This thing was already attracting neighbors at this point too:


At seven hours it looked like this, had a 1/4" smoke ring on the outside of the meat and was Damn Good!!!

The only thing I would do different is maybe spray a little bit of apple cider on it every hour for the last 3 or 4 hours.

Just some baked beans. Pulled some of the meat off the bone and made a damn good BBQ sandwich. I will have some more for lunch during the work week too. This was really easy now that I've done it. If I start using bigger pieces of hickory I can leave the smoker unattended for up to a couple of hours. I sat with it from noon until 7 this evening. The temp stayed fairly constant.
