Tater Poppers

I had a few small potatoes from the garden and had a vision of cheese, bacon and jalapenos. This was the birth of the appetizer, Tater Poppers© !

Cream cheese, shredded sharp cheddar, bacon, fine diced jalapenos. Baked mini taters cut in half and scooped out.

Breading the Tater Poppers© Flour, then egg/milk, then cracker meal.

Fry at 375 degrees until brown.

These were yummy! Next batch will have some Tony Chachere's Famous Creole Cuisine - Home of the world famous Original Creole Seasoning , more jalapeno and more bacon.

well, I'll be making those tomorrow.

My irish stomach loves anything potato and potato related.

Yum. Wonder if I can bake those instead and use low fat cheese, cream cheese and use fake bacon bits. Not exactly diet food but at least a lower calorie version. Use Panko so they turn out crispier when baking. Yum. Sweet idea!

I'd personally skip the cream cheese...

Maybe keep the cheddar, use the potato you scooped out... actually, probably just use the cheddar, maybe some monterey jack to even it out a little.

So it's been awhile since I've made the potato poppers. I kind of forgot about them until last night. I only vaguely remembered they were featured in a thread on O/R. After about 20 minutes of searching I finally found this thread again!! And after finding the thread, I made the drive into town to buy my ingredients, and I will be feasting on potato poppers for the first time in roughly a year (based on my last post in this thread.)
