We are having my folks over for something non-traditional. My Dad's Mom used to make enchiladas and fried chicken. The enchiladas had potato, onion, colby cheese and dill pickles, yes, dill pickles. I am not sure how a Mexican family came up with that! We will make the tortillas and the enchilada sauce from scratch. I will season the chicken with cumin, coriander, garlic, salt and ground chilis. Of course rice and refried beans, pico de gallo and guacamole as sides.
And Masonjaritas© will be served. :)
