4 packages (8 ounces each) cream cheese, softened
1 cup sugar
2 tablespoons all-purpose flour
2 large eggs
1 egg yolk
6 tablespoons sour cream
1/2 teaspoon vanilla

NOTE: The crust recipe has a flaw. It should read 1/4 cup butter.
All ingredients mixed. I was told a key to a great cheesecake is to not over mix it.

Xtra Holiday Meal: Pesto Focaccia Bread prep

3 tsp dry yeast
3/4 cup warm water (110 degrees)
1 tsp sugar
Mix these, then add
1 tsp salt
3 cups bread flour
1/3 cup pesto sauce

Place dough on parchment dusted with corn meal.

Spread dough with fingers to fill in the pan. Use your finger tips to "dimple" the the dough. Top with 3 tablespoons of olive oil.

Bake @ 450 degrees for 15 minutes.

Xtra Holiday Meal: Mac & Chz prep
6 tablespoons butter
5 1/2 cups half&half
1/2 cup flour
2 teaspoons kosher salt
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper
9 ounces colby jack cheese
9 ounces sliced muenster cheese
2 cups 4% fat cottage cheese
1 pound rigatoni
In a sauce pan make a roux with the butter and flour. Let this cook on low for about 2 minutes. Turn up to medium high.Add milk while whisking. Add spices and continue whisking. As this starts to thicken, add the colby jack. Whisk in, about another 2 minutes. Do not let this get above 160 degrees or the dairy will break from the rest of the ingredients. This will look like it is curdling. Take off heat and cook rigatoni according to directions. One exception, cut the cooking time by 3 minutes. This is going to bake in the oven and finish cooking the pasta. After pasta is cooked add the cottage cheese to the cheese sauce.

In a greased 9 x 13 baking dish pour two ladles of the cheese sauce followed by 1/2 of the rigatoni. Top with muenster cheese.

Place remaining rigatoni and then the remaining cheese sauce. Make sure all of the pasta is covered with cheese sauce.

Bake @ 325 for 40 minutes

1. Kosher salt crusted prime rib - I liked the results.

2. Pesto Focaccia Bread - Very tasty! This was the first time I used any kind of pesto in bread dough. Great flavor.

3. Baked Alabama - I was very happy how this turned out. Every component of this dish could stand on it's own.
