What do you snack on?
I was nosing around the fridge today and noticed some chipotle peppers in adobo sauce. Next to this was an avocado, what a great combo! We usually do a simple guacamole with kosher salt, hot pepper and fresh garlic. I decided to step it up.
1 avocado- peeled and seeded
1 chipotle pepper - mashed Chipotle - Wikipedia, the free encyclopedia
1/2 tsp powdered garlic
1/2 tsp kosher salt
mash together
Serve with tortilla chips and Masonjarita©

That sounds so yummy! I love guacamole; used to eat it damn near every day. Then I developed an allergy to avacado...

If you love chipotle, I make a killer chipotle roast. Take a can of chipotle peppers in adobo sauce & puree that with 1/2 of a medium onion & some garlic. Take the puree and slather some of it generously on the roast of your choice (I usually get a nice chunk of tri-tip & put whole cloves of garlic in slits in the meat). Allow the puree to marinate the meat for at least a couple of hours - I prefer overnight. Slow roast in the oven to your desired doneness (varies with type of roast). You can also do this with pork and make a pulled pork meal with it.
Take some of the unused puree and mix it with sour cream. Gently heat the sour cream mixture to infuse the flavors. I usually make two different batches of the cream sauce, with one being wicked spicy and the other more mild. Use the chipotle cream sauce over the sliced meat / pulled pork, etc. This chipotle cream is also quite delicious served cold and used as a dip for tortilla chips or condiment for whatever your little heart desires!
Warning: You can actually make this stuff strong enough that it's just as "hot" coming out as it was going in.
Totally worth it, though!!

That sounds awesome, adroitcuffs! I will definitely give that recipe a try. I often add chipotle in adobo to guacamole, it also makes a nice addition to roasted corn chowder. Sometimes I'll also add it to shrimp and serve it over polenta.
As for snacking, I tend to just see what's in my refrigerator and throw something together. I pretty much always have avocados and other fruits, olives, several cheeses, and cured meats on hand so quite often my snacking involves one or more of those items.
