Paneer (a simple farmers cheese)

I use a 1200 watt microwave, not the stove top. Notice she scorched the milk.
1/2 gallon of whole milk
1 cup fresh lemon juice

Place milk in large microwave safe bowl.
Microwave on high for 10 minutes.
Stir in fresh lemon juice. You will see the curd separate from the whey.
Microwave 5 more minutes.

Run through a fine sieve.
Kneed the cheese and place it in cheese cloth or a tea towel.

Place in another sieve above a bowl with the whey on top. Let this sit for about 2 hours.

I like using our homegrown collard greens for this. The curry recipe here is garam masala. We didn't fry the cheese this time. Sometimes the homemade cheese does not hold up as well.

Cook these down for about an hour. Then run in a food processor until smooth.

Return to stove and add the rest. We add tomatoes also.
