Eatin' Weeds
Every year we get these weeds that are edible. The wild spinach (lambsquarters) are pretty tasty. I cut some tarragon and some thyme to go with another side dish. MasonjaritaŠ optional.

Sautee some minced onion, fresh garlic, salt and pepper in a little butter.

Add the wild spinach leaves and fold in until the spinach is wilted and tender.

Ready!

Herb stuffed hashbrowns. Fresh tarragon and fresh thyme with minced onion and fresh garlic.

Ready!

Apple wood smoked top sirloin with crimini mushrooms, sauteed wild spinach, herb stuffed hashbrowns. Garnished with fresh spring onions.

Looks awesome! I have a couple of cookbooks that are all about weeds, I'll see if I can find them. Hubby keeps boxing stuff up and putting them in the attic, I'm about to demand an enclosed bookcase in the kitchen. One that I can lock.
