Here's my contribution for today (this recipe is not my own, it was given to me). The texture is light and somewhat spongy, but not offensively so. They are surprisingly tasty and the pork rind flavor is very faint.
Pork Rind Pancakes
2 eggs
1 1/2 oz pork rinds, finely crushed
1/2 cup heavy cream
1/2 tsp cinnamon
2 packets Splenda
Combine eggs, cream, cinnamon, and Splenda - mix well. Add pork rinds to mixture, stir to combine. Let stand 5 minutes. Now cook your pancakes!
