Low Carb Cooking
Is anyone following a low-carb or reduced carb diet? If so, post your recipes or meal/snack suggestions here!
Here's my contribution for today (this recipe is not my own, it was given to me). The texture is light and somewhat spongy, but not offensively so. They are surprisingly tasty and the pork rind flavor is very faint.
Pork Rind Pancakes
2 eggs
1 1/2 oz pork rinds, finely crushed
1/2 cup heavy cream
1/2 tsp cinnamon
2 packets Splenda
Combine eggs, cream, cinnamon, and Splenda - mix well. Add pork rinds to mixture, stir to combine. Let stand 5 minutes. Now cook your pancakes!

I do better on a LC diet as far as the rhuematism goes and I feel better over-all if I cut out sugar which for this sugar addict is extremely painful but the the results are worth it......except when my daughters bake pie.

Right now, I am on a total protein diet for the run-up to my weight loss surgery. In a couple of months, I would love to see some of these dishes. Nothing but whey isolate till October.
Car 4I would like my country back. I used to believe that one man could never destroy this country. Not so sure anymore!

Working with a trainer...worked on my nutrition too...which I find hard to do..did it for two months and then fell off hard..now back to eating well..just not quite as strict as he likes (I'm human..he is a machine haha).
I baked a white fish (talapia, halibut, mahi mahi) after I sprinkled with chili powder, cumin and Mrs Dash's spicy flavor...squeezed fresh lime on it and sprinkled fresh cilantro..covered with foil and baked til done. Took this and wrapped it up in a leaf of romaine lettuce...added some hot sauce if I felt like it. Quite yummy really.
Also boiled chicken breasts (I am sure there is some fancy term for that..but hey..I'm simple). Shred it and add buffalo sauce. Wrap in romaine lettuce with a small bit of Waldron Farms blue cheese dressing (no carb, calories, fat etc..tastes pretty good).
I cheat now on his no/low carb deal by sometimes wrapping in low carb/high fiber wheat tortilla and I use the sauces (which I was not supposed to have). I figure by eating well..mostly clean...and doing his hour non-stop bootcamp work outs I can afford to eat a tortilla or some buffalo sauce.
