I think I like this one the best. A little hotter so to speak. I like spicy foods so it fills that void. The other ones were good also. One thing I like is they each enhance the flavor of the steak with our over powering it. Some rubs/marinades completely take over the flavor.

Some of the featured seasonings.

Backdraft Jalapeno Popper Meatloaf Recipe.
1 lb. Ground Round (85% lean)
1 lb. Ground Pork (80% lean)
2 cups soft bread crumbs ( I used garlic parmesan focaccia )
1 Tbsp Backdraft Rub seasoning
2 Tbsp horseradish
3/4 cup diced onion
1/2 cup diced green pepper
2 lg. eggs
1/4 cup milk
1/4 cup ketchup
1 tsp dry mustard
Place all in mixer bowl with paddle attachment.

Mix on lowest speed for two minutes.

Backdraft Jalapeno Poppers!
Peppers - My homegrown jalapenos

3/4 cup cream cheese
1 Tbsp Backdraft Rub
Stuffed and breaded. These are set aside while the breading sets up.

Fried and ready to stuff in the loaf.

Had to try a few for quality! yummm...

I had to work today so I cheated and bought a rotisserie chicken already cooked. I again tried all 3 spices on the chicken I think I have decided that the 50 rub and the fireman rub are the best two.
I wanted a late night snack so I popped a bag of popcorn I put popcorn in 3 brown paper bags and sprinkled the 3 different spices on the popcorn. Again all 3 were freaking fantastic I specially like the 50 Rob on the popcornCheck your feelings at the door!

Time to weave some bacon!
I used 1 lb. John Morell thick sliced bacon
I placed two sheets of saran wrap first. This will assist in rolling up the loaf.
After making the bacon weave, season with Backdraft Rub. Spread meatloaf on top of bacon evenly and top with Backdraft Poppers.

Roll this up and tuck in the ends.

Season the entire outside with Backdraft Rub.

1 gallon bag of my collards
12 red chilis sliced
3 small onions diced
4 cups chicken stock
2 Tbsp brown sugar
2Tbsp vinegar
4 garlic cloves sliced

Tuscan and English Cheddar with Maytag Bleu cheeses. (36 oz. in all)

1/2 cup all purpose flour
6 Tbsp butter
5 1/2 cups milk
1 1/2 Tbsp Rescue Rub
1/2 tsp nutmeg
36 oz. cheese
In a large sauce pan melt butter on low then add flour. Whisk in and let cook for one minute.
Add milk and while whisking.
Add cheeses.
Heat just until the cheese is melted.
Do not let this get above 160 degrees or the sauce will break.
Cook one pound of pasta a couple minutes short of the directions on the package.
In a greased 9 x 13 pan place drained pasta and top with Rescue Me! cheese sauce.

Bake @ 375 degrees for 30 minutes.

Cast Iron Skillet Corn Bread
1 cup corn meal
1 cup all purpose flour
1/4 cup butter
4 tsp baking soda
1 cup buttermilk
1 lg egg
1/2 tsp salt
Preheat oven to 425 degrees
Place butter in skillet and place in oven until butter is melted.
Whisk the rest of the ingredients together and pour into skillet.

Bake for 20-25 minutes
