I finally got a chance to use the sea dog tonight.
In the oven right now. When it has about 10 minutes left I'll put a bung of butter in it to keep my arteries flowing. Should be good.
Did burgers again tonight. A bit over 1 lb of 80/20 ground chuck and about the same of 85/15 ground round, with 2 generous tablespoons of Code 3 Backdraft, some dried onion flakes, and a bit more salt & pepper. Nice, balanced heat.

Backdraft Maple Bacon Caramel Corn
1/2 pound bacon cooked crisp and fine chopped
5 cups popped popcorn (preferably plain)
2 teaspoons Backdraft Rub
1/2 cup packed brown sugar
4 tbsp butter
2 tbsp maple syrup
1/4 tsp baking soda
Place the bacon, popcorn into a large bowl and toss them together.
In a small saucepan, combine the brown sugar, butter, and maple syrup and stir them together over medium heat. Cook and continue stirring 3-4 minutes.
Add the baking soda, and stir vigorously. The sugar mixture will foam up, so be careful during this step.
Pour the foamy sugar over the popcorn mixture in the bowl and quickly stir everything together, making sure the popcorn, and bacon are coated with caramel.
Spread the popcorn out over the prepared baking sheet. Bake it for about 45 minutes, stirring every 15 minutes to distribute the caramel.
Once it is golden brown and crunchy, take the popcorn out of the oven and allow it to cool completely.
Backdraft Candied Jalapeno Slices.
1 cup water
1 cup sugar + sugar for coating candied slices
4 jalapenos sliced 1/4 inch
Simmer water and sugar in sautee pan until sugar is dissolved.
Add about half of the jalapeno slices.
Simmer for about 8-10 minutes
Repeat with rest of jalapenos
Take all of the slices and dredge in Backdraft Rub
Place on baking rack to set up, about 15 minutes.
Dredge in sugar and let set overnight.
These were deelishus! The sweet smokey flavor starts off almost buttery. Then the heat of the jalapeno hits! I bought jalapenos at my store thinking they would be milder than using my homegrown. Uh-uh, these were pretty warm.
Served on ritz crackers with cream cheese.
Note: Next time the seeds and membrane will be cut out.
Leftover jalapeno syrup....
hmmm, I wonder how that will taste in a Backdraft bacon popcorn?
5-0 Chocolate Maple Bacon Crispies
1/2 cup maple syrup
1/4 cup sugar
1/4 cup brown sugar
2 teaspoons of 5-0 Rub
1/2 cup Nutella
2 1/2 cups crisped rice cereal
8 slices bacon cooked and fine chopped
Butter an 8 inch square baking pan
Combine maple syrup and sugars and 5-0 Rub in sauce pan
Cook over medium heat until mixture comes to a boil, stirring frequently
Remove from heat and stir in Nutella until smooth
Add bacon and crisped rice cereal, stir until all is evenly coated
Place into prepared pan and press until even and compact.
Cool and cut into squares
This was a big hit with co-workers and friends!
