Chorizo Test #2

2 pounds ground meat (pork, beef, poultry)

1 1/2 tablespoons ground Ancho pepper

2 1/2 tablespoons ground guajillo pepper

2 teaspoons granulated garlic

3 teaspoons salt

1 teaspoon freshly ground black pepper

1 teaspoon dried oregano

1 teaspoon ground cumin

1/4 teaspoon ground cloves

1 teaspoon ground coriander

1 teaspoon ground red chili (mild heat)

1/2 cup distilled white vinegar

2 tablespoons water
