    Friday Night Fish Fry

    I dont know how big of thing this is in your areas, but living in southern WI most of my life, Friday Night is for Fish Fry.

    I love the deep fried beer battered cod myself


    Anywhere else is the fish fry a usual for a friday night?
    What are the ways you like it prepared
    Somebody Please, what the hell is that smell?

    Here I am eating frozen pizza... and cheap pizza at that.. talkin bout golden brown fish fillets cracklin in the hot grease... fresh cols slaw, hush puppies, and a chocolate cream pie along with a couple ice cold beverages...

    The best I can describe it is a ball of cornmeal with onion and other good stuff chopped up in the batter and fried. It is THE food to have with fried fish here.

    We ate a lot of cornmeal based foods when I was
    growing up because corn meal was cheap. In fact,
    we could even take grain to the local mill and
    have it ground into flour, meal, livestock feed,
    etc. Cornbread or biscuits were almost always
    served at any meal I attended at many houses in
    the neighborhood. They were usually pretty good
    too, although I preferred the lighter tasting
    hush puppies. Eaten fresh out of the fryer, they
    practically melted in your mouth. Here is my
    recipe:

    Ingredients:
    2 cups yellow corn meal
    1 cup plain flour (flour is what gave it the
    lighter taste and you can experiment with the
    amount you use if you want)
    2 eggs
    1 cup buttermilk (you can also use plain milk in
    a pinch, but nothing compares to buttermilk)
    3/4 teaspoon seasoned salt. I use Lowreys but just
    about any brand will work as you are just looking
    for something to spice things up a little
    1/2 teaspoon ground pepper blend (again, the idea
    is to spice things up a little).
    1 teaspoon baking powder
    2/3 teaspoon baking soda
    1/8 cup bacon grease. This is another big key to
    the flavor. In a pinch you can use other types
    of cooking oil, but bacon is my favorite.

    You also need some type of cooking oil to deep fry
    these in. I usually use Crisco oil although peanut oil
    and some of the lower fat oils work well too.

    Mix all of the dry ingredients in a bowl. Add your
    eggs, oil, and buttermilk. Stir it all up until
    the flavors are thoroughly blended.

    Turn your cooker on medium-high heat. When it's
    hot you can drop your hush puppies in using a
    table spoon. Allow them to brown on all sides.
    They should begin floating when done, but if they
    don't, don't overcook them.

    Well some would say it's a brand of shoe but I think Cidp24 is referring to this

    It's definitely a southern type delicacy.

    This is why it is called a hush puppy.
    Hushpuppies are a distinctly Southern food, associated with cajun dishes and soul food. They are now available throughout America on the menus of fried-fish fast food restaurants. Additionally, Hushpuppies may be derived from the West African cuisine acaraje or akara. [1] The name “hushpuppies” is often attributed to hunters or fisherman who would quickly fry corn meal and feed it to their dogs to “hush the puppies” during cook outs or fish frys. [2] Two other legends surrounding the hush puppy date back to Civil War days. Southern soldiers would sit beside a campfire, preparing their meals. When Union soldiers came near, they would toss their barking dogs some of the fried cakes with the command "Hush, puppies". A common explanation for the name in Charleston, SC is that slaves returning into the homes of their masters carrying food recently prepared in the outdoor kitchens would throw the batter balls to the barking dogs, telling the "puppies" to "hush." Also, during the time of the underground railroads, escaping slaves would feed these to the dogs tracking them while coaxing them with hopeful commands such as "hush puppies".[3]

    If you do, make sure you find a recipe with onion and/or corn in it, that makes them all the better. The recipe above is just one I found real quick for an example. It doesn't look like one of the best I have heard.

    This one looks pretty good.

    Hushpuppies:
    Vegetable oil, for frying
    1 cup yellow cornmeal
    1 cup all-purpose flour
    2 teaspoons sugar
    1 1/2 teaspoons salt
    1 1/4 teaspoons cajun seasoning mix (Tony Chacheres)
    1 teaspoon baking powder
    1 teaspoon baking soda
    1/2 teaspoon freshly ground black pepper
    2 eggs, beaten
    1 cup buttermilk
    1 large onion, grated
    1/2 cup finely chopped green onions
    2 jalapenos, seeded and minced
    Preheat a deep-fryer fill with oil to about 3/4 of the way full to a temperature of 375 degrees F.

    While the oil is heating, combine the cornmeal, flour, sugar, salt, cajun seasoning, baking powder, baking soda and black pepper in a mixing bowl and whisk to combine. In a second mixing bowl, whisk together the eggs, buttermilk, grated onion, green onions and jalapenos. Add the wet ingredients to the dry ingredients and stir just until a batter comes together. Be careful not to overmix.
    When the oil is hot, drop 1 1/2 tablespoons of the batter into the hot oil and fry, turning occasionally, until golden brown on all sides and cooked through, 3 to 4 minutes. Remove using a slotted spoon and let rest on a paper lined plate briefly before serving hot. Repeat with remaining batter. Yield: About 2 1/2 dozen hushpuppies
