It's 1:30 in the morning and I am roasting chicken.
The spousal unit got called out of town for a family emergency, and while I am sitting here watching Walker, Texas Ranger she calls all worried about some chicken she had put in the fridge to thaw.
So to ease her mind, I am going to roast it off, shred it off the bone and make chicken salad. The rest is going into the freezer for chicken and rice later.
At 1:30 in the morning.
