Either I am missing it, or it isn't there...
How can you tell which moderator, if any, works a particular forum?

We don't have Moderators for only a couple of specific forums because that would be less efficient, and cause problems. If you only have one or two Moderators on the site, and they're assigned specific forums, what use are they if a problem breaks out in a forum they're not assigned to? It's much better to have Moderators who can moderate the whole site.
